Note Organizer and Document Sorter Tool

I take notes vocally into my phone over the course of the week and organize them on the weekend across various documents the notes are focused on. The first list is very disorganized as I get bits of inspiration throughout the week on various things I'm working on that need sorted later. So the main list would look like (the auto formatting on reddit converts single hyphens to bullets) Topic1 - point 1 - point 2 -- further point 2 Topic 2 - point 1 And more On the weekend I take this list, separate them out into the individual topics, and then move them to their individual documents on that topic It's a bit tedious, but I've not yet found a way to more organize on the weekend from this jumbled list of topics rather than copy pasting everything onto their individual pages. I use OpenOffice as a word processor, when I try to convert the text to a table it doesn't separate properly but maybe that's an issue with how it's formatted? (I've heard hyphens and tables don't play well) I tried tabs for separation on the Topic line and that sort of works but I can't get the table to separate by row rather than column I was wondering what else might be around or any other suggestions someone may have? (even if it's to try another subreddit lol) Thanks for your time
